Curried Lamb and Lentil Stew.

Mixed some recipes from here and here. Had a bag of lentils that I got tired of looking at. Got some lamb on sale. Of red meats, lamb is probably the best for rich, spicy dishes. I think I'd still prefer a good cut of beef to lamb if it were a steak though, as lamb on its own may be too gamey.

Browned the lamb in a pan before tossing it into the crockpot with a can of tomatoes, some beef broth for the lentils, and everything else. Pretty good.

Pulled Pork.

Used a dry rub from here, and let it sit in my refrigerator for two days. Shit was AWESOME. 1:1:1:1:2:2:2:2:4 (in TBS, black pepper, oregano, sugar, white pepper, chili powder, cumin, brown sugar, paprika) plus a teaspoon or two of cayenne.

The sauce was from Elise. I used a can of Barq's root beer instead of Dr. Pepper. Somehow, I think the Dr. Pepper would have been better. The sauce was good but had something off about it. Maybe too tomato-y.

Salsa Chicken and Black Bean Soup.

Sourced from 365. I adjusted the proportions a bit since I was using more black beans and wanted it to be thicker. But it was pretty disastrous. The salsa was nonexistent, and it was too soupy. I used dried beans this time instead of canned, and some of the black beans were still a bit harder than I would have liked, even after soaking them for quite a while and cooking them in the crock pot for a long time. I'll try it again some other time. I can probably guess my way through it better.

Pulled Pork.

Sourced from Elise. I ran it through the crockpot rather than the stovetop and skipped a simmering, which definitely made a difference for the worse. The sauce turned out pretty good.

Holy cunt. Is that some fucking paella?

Obligatory. No, it's jambalaya.

Ref'd here and here. Eh, you know, you just start flippin' all those pages and throwing stuff around. I used my last two chicken thighs and chicken stock and shrimp. I also added, dare I say, too much black pepper. I wonder how much white pepper changes the flavor. But yeah, I'm eating celery for once. Weird. I should think of something to make with the other bunch before it goes bad. Needs more than one bell pepper. And I added bacon. Everything is better with bacon.

Yeah, a bit spicy. I added some Frank's to my bowl, and the pepper was still just...something else. Maybe I'll try it with the sour cream to tone things down.

Arroz con Pollo.

This was absolutely devastating. Hybrid sauces.

This is probably one of the best things I've had in awhile. With some self-control, it should last me.

Those are corn tortillas, by the way. I go back and forth on whether I like corn or flour better. But corn is definitely the way to go on this one.

CHILI.

Here's the sauce. I followed it but without the flour (used ground beef instead), fennel, cayenne (couldn't find them), and green pepper (didn't want to spend the money). I also wasn't paying attention to my measuring spoons and measure out everything relative to a 2 tbsp scoop, thinking it was a 1 tbsp scoop. So all the spices are right in proportion to each other, but it's actually double what the recipe called for. Still turned out delicious.

The picture is before I dressed it up. I was hungry. Typical additions: cheese, sour cream, Frank's, cornbread. I could eat this all night.

Chicken Pot Pie. Sort of.

Um. Iw as trying this recipe and did all sorts of weird stuff. Long story short, it turned out pretty runny and tasteless. Probably will not try it again for a long time. The biscuits, on the other hand, were awesome.

What? I like pepper.

Pot Roast and such.

This picture is actually the last bits of pot roast. I kept forgetting to take a picture. (Listen, I've been busy.) Rump roast, baker potatoes, baby carrots, onions. This was the first thing I made in my crock pot my sister got me for my birthday. I suspect it will get a lot of use, especially come winter when I will stockpile food for hibernation. This batch, filled to the brim (about 5 quarts), lasted me nearly two weeks.

Of course, man cannot live on pot roast alone so I mixed it up now and then. Pot roast sandwiches, pot roast and noodles, pot roast and rice. Pot roast and pot roast. Delicious.
