Chicken Sloppy Joe Pizza.


I was looking for ground chicken recipes since I picked up some ground chicken on the cheap the other day. Basically , my only real ground chicken recipe is from Deb who makes baked meatballs with tomato paste on top and in the mix. Found this here. It is basically just a sloppy joe recipe with ground chicken instead of beef and then pour onto a par-baked pan of cornbread, topped with cheese, and then baked some more. It is pretty good.

Indian Pudding.


From Elise. I had some small amount of cornmeal I wanted to use up, and this looked interesting. It's basically sugar and molasses spiced milk porridge heated at low in the over for a couple hours until it sets. Almost pumpkin pie-ish and pretty good with ice cream.

Mexican Pizza.


I used a cornmeal crust which was pretty good:

  • 1/2 cup yellow cornmeal or polenta
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 2 tablespoons olive oil
I think 20 minutes at 400F should do it. Pretty simple and no wait time.

Polenta.


Finally made some polenta that wasn't a ridiculous mess. I used mostly yellow cornmeal and some white cornmeal, paid attention the whole time, salt, pepper, Parmesan. Cooled in a 9x13 pan. Cut and served with some Italian sausage and tomato sauce. Works well for breakfast too with runny eggs.

Tamale Pie.


Comfort food sourced from Elise. It's basically a thick chili under a cornbread crust. I made the cornbread from scratch though I didn't make enough to get good coverage and still rise well. All in all, pretty good, though it's really nothing like a real tamale.

Polenta Bake.


This is it's good side. Mine ended up too soggy or something. It didn't have the structural integrity to support its own weight. It's essentially a cheese lasagna using polenta instead of pasta. I thought ricotta in the inner layers (instead of fontina) would help flesh it out, but it just took up space and I forgot all the vegetables, which, in retrospect, might not have gone over well anyway. Homey, casserole-style food, which will take some tweaking. I forgot the salt again for the polenta. Also, I'm embarrassed that my cornmeal is white and not yellow. Sourced from Elise, of course.
