Banana Cookies.


From Elise. I had some bananas that needed to be used and I didn't want to go the typical banana bread/muffin route. A cookie seemed like the next logical option.

It's a standard size cookie batch with about an extra half cup of flour to presumably deal with the extra moisture of the 2 large bananas I used.

I'm curious if ripe bananas could be used in anything other than baked desserts.

Pillow Cookies.

This is a huge cookie. The paperclip for scale. It is also a huge paperclip.

Saw the picture and a name and googled it. The recipe I found used box brownies and a from-scratch cookie recipe. I don't own box mixes of sweets (except pudding) so I made both from scratch. I used my standard chocolate chip cookie recipe, which, compared to the one given, uses more sugar to flour (2:3) versus their .6:1. The difference, I think, is that their ratio will yield a lighter, fluffier cookie which would be better suited here. Also, chilling the dough is a must. A slightly larger pan (I used an 8x8) would have given slightly thinner brownies.

Mine looks like a flying saucer.

Oatmeal Raisin Cookies.


Sourced from Deb's Smitten Kitchen (contributor [as well as Elise] to Good Bite's launch). The recipe is almost identical to Elise's, but I opted for this one because it was written up as a half batch and had the interesting twist of refrigerating before baking.

I actually didn't refrigerate this initial pan, but I packed away a bit in the freezer on Deb's suggestion.

And it turns out they rose up just fine without the refrigeration though a bit light. I checked at 10 minutes but decided to leave them in for another 2. Crispy around the edges, chewy but oddly fluffy in the middle.

Addendum: I tried some of the ones I had frozen. They certainly rose more, but didn't spread out as much. If I wanted normal-sized cookies, I would have had to double the dough for each ball. I think the unrefrigerated ones were better actually.

Cookies.


I'm working on committing baking to memory. Baking is weird. This is 1:1:1:1:3 of egg, brown sugar, white sugar, butter, flour, and bit of salt and baking soda. These are toffee and dark chocolate chip cookies, separate.
