Guinness Bread with Molasses.


From Elise. I like how quickly this comes together as there is no yeast, no rising, no kneading. Self-rising flour (flour and baking powder and salt) and beer bring the rise, sweetness from sugar and molasses. Easy sweet bread.

Apple and Sausage Pie.


I had been debating whether I wanted to add a cheese sauce to the apple and cheese pie I was planning on making. I figured cheese and apples go well together so I could merge some pairs transitively. I found that Elise actually has a recipe for this and hers uses ricotta (with a lot of other cheese) mixed in with egg. I skipped the feta and only topped with shredded white cheddar. With a single pie crust, it comes out fat and protein heavy which is good since I can pick a carb of my choice at breakfast.

Cabbage, Carrot, Potato Muffins.


From Chaya, who seems to specialize in gluten-free food. It is basically a potato pancake with that other stuff and then baked in a muffin tin instead of fried in the pan. It's a convenient way to use up some vegetables, but it'll need some serious spicing up to suit me. I ate them for breakfast so it's pretty versatile.

Raisin Scones.


Another new installment in my resolution to bake or crockpot something every week. It was also an experiment to see how defrosted heavy creme would work out. I had read conflicting opinions on whether or not it was not ok to store heavy creme in the freezer. It separates, but it seems to be easily shaken back together without ill effects.

Adapted from Deb's creme scones. I was surprised at how quickly this recipes goes from start to finish. I didn't do a very good job of forming my scones. The dough was a little dry and probably could have used either more creme or less flour.

Mexican Monkey Cake.


Sourced from Farmgirl. I was actually little disappointed by this recipe. I was expecting something more like monkey bread, but it's basically just a banana walnut bread with way too much chocolate and sugar. Oh, and the "Mexican" is just the addition of some cinnamon.

Shakshouka.


Sourced from Kevin. The idea is an egg poached in a chunky tomato chutney. An un-Mexican huevos rancheros? I dig it. I let the egg cook for too long and the yolk cooked through. Runny yolk with good bread and tomatoes with good bread are wonderful things.

Potato Pancakes and Zucchini.


I used a leftover boiled potato to make these potato pancakes which turned out better than the latkes I had tried before. For the batter, I just used milk, flour, an egg, and some salt and pepper. Turned out awesome.

The sausage is from Butcher Wagon, which I bought because it was cheaper than the Jimmy Dean one. What's nice about it is that it only uses pork, corn syrup, water, "flavorings", and dextrose. It said specifically "flavorings" and not spices, but I hope that just means spices. I don't recall what Jimmy Dean has in it, but I'm willing to bet it's more than those five ingredients. (Looked it up. Basically the same stuff with the addition of MSG. Which I don't think you can roll into the heading of "flavorings".) In any case, Butcher Wagon tastes better.

Apple Coffee Cake.


Sourced from Elise. I get the impression that baked goods are more or less equal parts butter and sugar, an egg every half cup or cup of flour. 1.5ish units of flour relative to sugar. This used baking powder. I still don't get it.


This could have used less sugar on top.

German Pancakes.


I think I ran across this recipe on Cooks.com while looking at something else. Curiously simple: 1:1 flour (preferable bread flour which makes it go crazy, but all-purpose works fine) and milk (1 cup) and anywhere from 2 to 6 eggs, whipped, which takes a damn long time by hand. Salt and sugar maybe, cinnamon and vanilla maybe. Baked for ~15 minutes at 400. Served with lemon juice and powdered sugar.

Sugar Doughnut Muffins.


From a new source I found, Baking Bites, which looks interesting. Anyway, I wanted to try something other than cookies. 1:1:2 of milk, sugar, flour (but in 3/4 cup base), egg, oil, baking POWDER, vanilla, nutmeg, salt. I cut the post-bake butter brushing and hoped the sugar would stick on its own, which it did a bit. I did cinnamon and ginger as well on half of them.


Ok, I guess? It's been awhile since I've had any donuts that weren't crullers or cake donuts. They don't have the same texture as their deep-fried counterparts, but they are healthier. We'll see how they handle in the morning. And they really are that pale.


Also, strawberries in vodka tonic, not as interesting as I thought it'd be. Also, I'm starting a new quest to produce a complete, somewhat healthy and nutritious, freezable breakfast in a single container.

Florentine Omelet.


Apparently, if you want to make something Florentine, all you have to do is add spinach. Whatever.


My skillet and I haven't been getting along very well lately. One of us is going to end up in the oven for awhile. Ricotta, blanched spinach, topped with mozzarella and basil. I forgot the salt again.

Breakfast Frittata.


I thought I had posted this before, but it seems I missed it.


This is one of the first uses my skillet got back when I bought it. I used three color peppers, onions, sliced red potatoes, and shredded Parmesan for this. Served with baguette, kiwi, bacon. I nixed the salt and pepper thinking the bacon would suffice and to accommodate, respectively. A lot of cholesterol, but still pretty damn good.

Breakfast Quesadilla.

Same quesadilla making process as before (butter to brown, cheese, fill, fold, brown). In this one, I used some eggs, mushrooms, onion, and green pepper; veggies cooked before hand to reduce crunch. Served with sour cream, japs, and green salsa.
